SUBSTITUTE an equal amount of Carnation Evaporated Milk in place of the cream product called for in your recipe for that rich, sweet dairy flavor. Use Carnation Evaporated Milk in place of half-and-half, light cream, coffee cream or heavy cream.

    I have a recipe for Turkey A La King which calls for 2 cups of cream. Have been making this for years according to the recipe until this week. Since I had no cream at home, I grabbed a can of Carnation Evaporated Milk to use instead. The recipe turned out better than ever before. Will always make the new way now.

    I remember my Dad using canned milk in his coffee all the time, I started using canned milk again after a recipe only called for half can,my coffee tasted as if cream was added. I now use carnation milk in soups,cakes, I'm never without a can in the house.

    This is the best tip ever. Usually I have to make a special trip to buy heavy cream for special recipes and then end up throwing out the left-overs, or I just don't make that recipe. I always have evaporated milk on hand. I'll be baking my special scones more often now.

    French Toast and cream soups

    I use Carnation evaporated milk for my french toast to give it a richer, more custard-like batter. It's the only thing I have ever used to make my cream soups. I never have to worry about having enough milk in the house. Carnation is always there in the cupboard.

    My dad is 91 and he has been using Carnation Evaporated Milk on his horse-packing, hunting and camping trips in Alaska's wilderness for over 60 years. He opens two small holes in the top of the can with the tip of the can-opener blade of his pocket-knife, then when it is time to travel he plugs the holes with bits of paper towel. In the days before coolers, he kept his milk fresh by anchoring it in a stream or digging a hole for it in the cool ground. Even today, with dozens of flavors to choose from, he still prefers Carnation Evaporated Milk in his morning coffee. Because of where we lived in Alaska, my parents would buy a case at a time. I try to keep at least 6 cans on hand for my own coffee as well as my family's frequent requests for pumpkin pie.

    My family and friends love my clam chowder and crab and corn chowder but the recipes call for heavy cream. I substitute a can of fat-free Carnation, whisked with a tablespoon of cornstarch, in the chowder pot and it tastes wonderful - much lower in fat and cholesterol too! One of my most requested dishes for winter get-togethers. You can also substitute the fat-free Carnation for the heavy cream in your favorite quiche recipe and signigicantly lower the fat content. My husband loves it! We can eat seconds and not feel guilty!

    I always keep a can of Libby's Pumpkin and Carnation evaporated milk in my pantry. I LOVE pumpkin pie. I drink half and half in my coffee, and had run out.     My husband and I were trying to come up with an idea of something for dinner. My husband saw a recipe in one of my cookbooks for an alfredo sauce. We didn't hav any cream to make it so he decided to use Carnation evaporated milk as a substitute. It turned out wonderful. We cooked up some angel hair pasta, steamed some broccoli, cooked up some chicken breast and the alfredo sauce and it was an excellent meal. The evaporated milk was a great substitute. We always buy the lower fat evaporated milk or fat free when we can find it. It really does make a great permanent substitute.

    To my surprise, evap. milk was great for use in place of cream. However, I've just used it in cooking replacements instead of baking, but I'm going to do so. You can also use a little bit less & add a bit of water to get the texture you want. I just puncture the can with a can opener & cover w/tinfoil in the fridge to use until gone. A staple in my pantry.
