Sour Milk Made with Carnation Evaporated Milk is a great alternative to buttermilk to give your recipes that tang!

Ingredients:

  • 1/2 cup NESTLÉ® CARNATION® Evaporated Milk
  • 1/2 cup cold water
  • 1 tablespoon vinegar or lemon juice

Directions:

If you do not have buttermilk on hand, you can substitute sour milk made with CARNATION Evaporated Milk (Regular, Lowfat or Fat Free).

MEASURE evaporated milk into glass measuring cup. Add water and vinegar; stir. Let stand for 5 minutes before using it in a recipe.

    I will use this instead of buying buttermilk - it is cheaper and I won't have to waste the buttermilk that is not used in the recipe. As we dont use it for anything else but baking.

    i never would have thought of using evap milk to make sour milk. i knew about taking a cup of milk and adding lemon juice to it, but i hadn't though about mixing evap milk with water and lemon juice. i run out of milk alot, but always have a can of evap milk. now i can still make pancakes even if the kids have consumed all the milk without telling me.

    I hate to buy a quart of buttermilk only to use a cup or two and the rest goes to waste. This recipe is so much easier, and much less expensive, too! I always have a few cans of Carnation Evaporated Milk in my cupboard. We use it for ooffee and tea,since it has so much less fat than cream. Now I have another use for this versatile product.     I do this all the time to substitute for buttermilk in my banana bread recipe. But I don't use water. I just use the Carnation milk and lemon juice. I need about half a cup for my banana bread, so I pour half a cup of milk into a one-cup measure and add 1 tablespoon of lemon juice. It's very creamy.
