Great recipe and very simple to make but had to leave off the avocodo. Added mexican style fine shredded cheese instead. Family loved it.

This is a real keeper! We love the southwest flair!!! I have tried this recipe using sour cream or heavy whipping cream instead of evaporated milk. I have used flour tortillas instead of corn tortillas. It is also delicious topped with salsa or pico and sour cream and sliced tomatoes on the side. For a green treat use salsa verda as a add in to scambled eggs. If you like southwest flavor you can't go wrong with this one.

    Linda Lamb from WINNSBORO, TX

This was a wonderful change of pace for dinner. The tortillas add a different texture and a really good flavor. I fried them first in a little oil to soften them (rather than use just cooking spray) and the taste was perfect. It was a great change when you are tired of the same old things every night.
