Ingredients:

  • 2 cups all-purpose flour
  • 5 teaspoons ground allspice or pumpkin pie spice
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup LIBBY'S® 100% Pure Pumpkin
  • 1 cup packed brown sugar
  • 1/2 cup Apple NESTLÉ® JUICY JUICE® 100% Juice
  • 2 large eggs
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract

Directions:

PREHEAT oven to 350° F.

SIFT flour, allspice, baking powder, baking soda and salt into medium bowl. Combine pumpkin, sugar, Juicy Juice, eggs, oil and vanilla extract in large bowl; stir well. Stir in flour mixture just until moistened. Spoon into greased 9 x 5-inch loaf pan.

BAKE for 65 to 70 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes; remove to wire rack to cool completely.

    Not what I expected

    The recipe is sound, it's just not what I expected. It is very much a BREAD as the title indicates. I was hoping for more of the super moist pumpkin loaf (like you get at Starbucks) but this is more like a homemade wheat bread texture and consistency. Good flavor though, I will definitely eat the whole thing.

    I really enjoyed makeing this, tasted exactly like what my dad used to make at home. The only down side was that it took forever to cook, and since I cook in a comunal(sp) kitchen in my dorm it was a little annoying haveing to sit around for an hour...but that's probably specific to me! Overall it was really tasty and a hit with my friends

    This is so quick and easy! It is easy to double the recipe. I like to make 1 loaf like the recipe states and add chocolate chips to the other one. My toddler LOVES this bread. I added some baby rice ceral into the mix for more vitamins and minerals.

    I made this according to the directions and all my friends loved it. I was originally looking for a cake recipe made with pumpkin but there wasn't one. Now there can be. I thought I would use a bundt pan for a beautiful presentation. I added chopped walnuts to the original recipe and doubled the oil and apple juice for a more cake like consistensy. It baked beautifully, looked wonderful and tasted just as great as the original. Try it!!!

    I absolutely loved this quickbread, and so did everyone who tasted it! With a spicy, rich taste and inexpensive ingredients that I had on hand, these fragrant loaves filled the whole house with the scent of yummy baking. The bread was moist and had a great texture. I substituted applesauce for the oil called for in the recipe and baked the first batch in two smaller bread pans for around 30 minutes. For the second batch, I rescaled the recipe to 1 1/2 batches and used two large loaf pans. It made two perfect, pumpkin loaves and I had enought to share with some friends, who raved about this bread! Excellent!

    I make this bread at least once a week and the whole family just loves it. I use the pumpkin pie spice. Also add variations to it. I use almond extract sometimes and add chopped walnuts to the batter. Yummy!! Great recipe and very, very easy to make. Freezes great too.

    Cut the spice in half as per another review and made into 2 loaves baked at 35 minutes(high altitude version). The very best pumpkin bread I have ever tasted. More moist and tasty than a stuffed pumpkin roll baked by another family member. Amazingly moist for 2 tablespoons of oil, even moister than recipes with 1/2 to 2 cups of shortening. Made another batch 2 days after the first. Highly!! recommended.

    Absolutely loved this recipe. Very moist. I made some 1 day as per your recipe. I decided that it was so good, I would make it the next day to freeze to use for gifts. I ran out of apple juice and used orange juice and had to substitute some of the allspice(ran out of that too!)and used cinnamon, nutmeg and cloves combination. This is one of my families favorites!
