Spinach and Pasta Salad

Ingredients

1 package (9 ounces) BUITONI Refrigerated All Natural Linguine
5 cups shredded fresh spinach leaves
1 cup chopped fresh tomato
1 cup halved, thinly sliced red onion
1/4 cup pine nuts, toasted
1 container (7 ounces) BUITONI Refrigerated All Natural Pesto with Basil
3 tablespoons lemon juice
1/4 teaspoon salt

 

Directions

PREPARE pasta according to package directions. Rinse and drain.

COMBINE pasta, spinach, tomato, onion and pine nuts in large bowl.

COMBINE pesto, lemon juice and salt in small bowl. Add to pasta mixture; toss well. Serve immediately or refrigerate.

    I made this for the first time at Thanksgiving and everyone loved it. Now I make it about every 2 weeks. Great textures and wonderful flavors. I used boxed linguine instead of the refrigerated and it was just as good.

    This recipe was absolutely awesome. I made it for Father's Day and it was most definitly a hit. I added more lemon, a bit more salt and pepper and just had to have my garlic, 2 cloves, crushed with the salt, added to the pesto and lemon before tossing all together. Some feta cheese would be a nice add-in. Maybe even some hot pepper flakes:)

    This salad makes a beautiful presentation! The combination of flavors and colors blend perfectly. I doubled the recipe and had difficulty mixing it because of the length of the linguine. Next time I will probably cut the linguine in half to keep it from tangling. My sister loved it for her bridal shower and asked me to make it for the wedding!
