Spring Salmon is an elegant and easy to prepare dish. You'll enjoy the fresh and tangy flavor influence that lemon and capers add. Perfect for entertaining.

Ingredients

  • 4 (about 6 ounces each) wild salmon fillets
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 2 teaspoons butter
  • 2 bunches sliced green onions, cut on the diagonal into 1/2-inch pieces
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped Italian parsley
  • 2 teaspoons capers

SEASON salmon with salt and pepper.



HEAT oil in large skillet over medium heat. Cook fish for 3 minutes on each side or until lightly browned. Remove from skillet.



ADD butter to skillet and once melted, add green onions and lemon juice. Cook for about 4 minutes or until onions are just tender. Stir in parsley and capers; return fish to the pan. Cover; steam for 2 minutes. If salmon flakes easily with fork, it’s done. Serve immediately with sauce.
