Ingredients:
4 (about 6 ounces each) wild salmon fillets
1/2 teaspoon coarse salt
1/4 teaspoon ground black pepper
2 tablespoons olive oil
2 teaspoons butter
2 bunches sliced green onions, cut on the diagonal into 1/2-inch pieces
1 tablespoon lemon juice
1 tablespoon chopped Italian parsley
2 teaspoons capers
Directions:
SEASON salmon with salt and pepper.
HEAT oil in large skillet over medium heat. Cook fish for 3 minutes on each side or until lightly browned. Remove from skillet.
ADD butter to skillet and once melted, add green onions and lemon juice. Cook for about 4 minutes or until onions are just tender. Stir in parsley and capers; return fish to the pan. Cover; steam for 2 minutes. If salmon flakes easily with fork, it’s done. Serve immediately with sauce.
