SweeTart Lollipops

Ingredients

Parchment paper
2 cups granulated sugar
1 cup water
3/4 cup light corn syrup
1/2 teaspoon cream of tartar
1 to 2 teaspoons orange, lemon or vanilla extract
1/8 teaspoon purple or other color gel food coloring
WONKA SweeTARTS and Mini Chewy SweeTARTS
20 lollipop sticks

 

Directions

PREHEAT oven to 250° F. Line baking sheet with parchment paper. Place 4-cup volume heat-proof glass measuring cup with spout in oven (a warm cup will help keep your syrup mixture fluid).

PLACE sugar, water, corn syrup and cream of tartar into medium saucepan over medium heat; stir with a wooden spoon to dissolve sugar. Once syrup begins to boil insert candy thermometer and do not stir again; continue boiling, undisturbed until syrup reaches 300° F (hard-crack stage) on the candy thermometer.

REMOVE pan from stovetop and pour syrup into heated measuring cup. Carefully stir extract and food coloring into syrup. Working carefully and quickly, pour about 1 tablespoon syrup for each lollipop onto prepared baking sheet. Immediately press lollipop stick into syrup then quickly press SweeTarts and/or Mini Chewy SweeTarts in. (It is helpful to work with another person so one person can pour and other person can position SweeTarts). If needed, measuring cup with syrup can be placed back into the oven to soften. Let lollipops sit at room temperature for 30 minutes to harden.

Cook’s Tip: Candy molds work great in this recipe! Simply place lollipop sticks into molds; pour syrup into molds and quickly press in SweeTarts. Cool for 30 minutes then carefully remove lollipops from mold.
