Tasty Turkey Meatloaf

Ingredients

2 pounds lean ground turkey breast meat
1 1/2 cups thick & chunky salsa, divided
3/4 cup quick or old-fashioned oats
1/3 cup finely chopped red onion
2 tablespoons dried ground parsley flakes
1 tablespoon MAGGI Instant Chicken Flavor Bouillon
1 teaspoon ground black pepper
1 clove garlic, finely chopped
1 large egg, lightly beaten

 

Directions

PREHEAT oven to 350° F.

COMBINE turkey, 1/2 cup salsa, oats, onion, parsley, bouillon, pepper, garlic and egg in large bowl; mix well. Press mixture into 9 x 5-inch loaf pan.

BAKE for 60 to 70 minutes or until browned and firm. Let stand for 5 minutes; remove from pan. Serve with remaining salsa.

    My family loves meatloaf, I normally make it with ground beef but thought I would try something different. It was a sucess! My son made a face when I told him I was making turkey meatloaf and then when dinner came , he ate his words! My husband did not even know it was turkey until my son and I convinced him that it was! I did do two things different which is leftover from my usual meatloaf: I put half the mixture in the loaf pan and then sprinkled grated cheese over it and then placed the other half of the mixture over the top. I then poured chili sauce over the top of the meatloaf.

    great low-carb dish!

    I really liked this meatloaf for taste but it lacks a bit in the presentation. Perhaps with a topping it would be perfect. It was fantastic as a low-carb recipe. My fiance and I are trying the Atkins route and this only came out to 10g of carbs per serving. Woo Hoo!

    My adult son is on a low cholesterol diet, my adult daughter and myself are on a low fat diet. So this recipe worked just fine for each of us. It is very easy to make and quite tastey for a ground turkey meatloaf. I didn't have enough turkey to make the entire recipe so I halved it. I also used just the egg white to lower the cholesterol even more. I used quick cooking oats as I didn't have the old fashioned kind.It still came out good with these exchanges. This meatloaf held together very well and cut nicely. Good recipe!

    Being on the Atkins diet requires me to eat more lean meat and less carbs. This also helps those who have type 2 diabetes. I found making this in the morning was easy and serving it with eggs is filling and delicious.

    My hubby is on a low cholesterol, lowfat diet yet he insists he needs meat at every meal to feel full. This recipe is great and tasty. I use an egg subtitute instead of the egg to create an even healthier meatloaf. With this recipe he does not miss the beef meatloaf he used to eat and that is really wonderful! We have cut our red meat consumption conciderably using this and other ground turkey and chicken recipes that are easily found here at Meals.com. I am also a diabetic and need to watch my weight so this recipe really works for us.

    Fast and Easy

    I have tried this recipe twice, both times I've done it in the microwave oven. It is very simple and tasty. Just put it in a glass pie plate in the shape of a ring (leave center open) and bake for about 10-12 minutes, until it is firm to the touch. I usually cut the recipe in half, as there is just two of us. Cooks in 8 minutes with 1 lb. of meat.
