Inspired by Elvis Presley’s passion for peanut butter and banana sandwiches, this unique peanut butter sandwich is great for a quick anytime treat. In this version, pumpkin and peanut butter, two nutrition powerhouses, blend easily to create a spread without all the fat and calories of plain peanut butter. Simply spread the light and creamy pumpkin-peanut butter over whole wheat bread and cover with banana slices. Even your family will say "thank you very much"!

Ingredients:

  • 1/2 cup LIBBY'S® 100% Pure Pumpkin
  • 1/2 cup creamy or crunchy peanut butter
  • 4 slices whole wheat or white bread
  • 1 medium banana, cut into 1/4-inch slices

Directions:

COMBINE pumpkin and peanut butter in small bowl until well blended. Makes 1 cup.

SPREAD 1 tablespoon pumpkin peanut butter spread on each slice. Top two slices with banana slices. Top each with second slice of bread to make sandwiches.

REFRIGERATE leftover pumpkin peanut butter spread in tightly covered container for up to 5 days.

TIP:
Sandwiches can also be made with pita bread, English muffins or tortillas. The pumpkin peanut butter spread is also good on crackers or with celery sticks.

Not only is this sandwich delicious--I have a very fussy teenager, to whom Peanut Butter sandwiched with a Banana is the best meal--the pumpkin adds flavor, texture, and a wonderful boost of Vitamin A!

    new, fun way to eat peanut butter

    this is great. i love peanut butter, and the pumpkin adds a nice autumnal flavoring to it. i would, however, suggest adding cinnamon or nutmeg- I added some of both- to the pumpkin/PB mixture to 'sweeten' it up a little bit. also, the peanut butter to pumpkin ratio is a bit off- in my opinion, there should be slightly more peanut butter than pumpkin, or else the mushy pumpkin is a bit too overpowering. overall, though, a great, easy recipe!

    This was an amazing combination. I hesitated to prepare this with the fear of spoiling my favorite sandwich...banana slices and mayonaise...sometimes adding the peanut butter. I left the mayo off and added the pumpkin with the peanut butter, creating a delightful change. It's a great way to use leftover pumpkin from another recipe.

    I've always liked Peanut Butter & banana sandwiches, and I was surprised at how well the pumpkin blended in with the PB & banana. This was very easy to make, and is a good way to use canned pumpkin that is left over when another recipe only calls for part of a can.

    I am so pleased to see recipes that support my perceptions of what is delicious. I was quite tickled to see an idea very close to a concoction that I have made myself, although I like to keep the puree and the PB separate to really taste the flavors. I also like to spice it up a bit with whatever I may have on hand - nutmeg, cloves, cinnamon, or pumpkin pie spice (of course!). This also works well with soy nut butter (crunchy preferred). For another orange veggie and PB combination, try mashed sweet potato. Definitely a bit more unique but just as tasty.
