Tropical Sunshine Cake is a great fit for brunch, breakfast party or dessert. Topped with bits of pineapple, toasted coconut flakes and chopped almonds, it will make an elegant addition to your table.

Ingredients:

  • 1 pkg. (18.25 oz.) yellow cake mix
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
  • 2 large eggs
  • 1 can (20 oz.) crushed pineapple in juice, drained (juice reserved), divided
  • 1/2 cup chopped almonds (optional)
  • 3/4 cup sifted powdered sugar
  • 1 cup flaked coconut, toasted
  • Whipped cream

Directions:

PREHEAT oven to 350° F. Grease 13 x 9-inch baking pan.

COMBINE cake mix, evaporated milk and eggs in large mixer bowl. Beat on low speed for 2 minutes. Stir in 1 cup pineapple. Pour batter into prepared baking pan. Sprinkle with almonds.

BAKE for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 15 minutes.

COMBINE sugar and 2 tablespoons reserved pineapple juice in small bowl; mix until smooth. Spread over warm cake, sprinkle with coconut and remaining pineapple. Cool completely before serving. Top with whipped cream, if desired.

    I made this delicious moist cake for my family this past weekend. I made a substitution of English walnuts in place of the almonds. I also made my glaze up a bit too much ahead of time -- so it would not cover the cake adequately. So I opted to make an additional batch with the small remaining bit of pineapple juice and some water and an additional 3/4 cup of sifted powdered sugar -- this worked out very nicely. I then placed the remainder of the toppings on the cake. Yummy, I served it with vanilla ice cream instead of whipping cream. I didn't know if I should refrigerate the leftovers or not -- but did so because of the pineapple on the top. I will definitely make this cake again. My guys loved it. We shared it with the neighbors who also gave it rave reviews.

    I made this cake for my dad's birthday and it was a big hit! Everybody loved it. The cake was so moist and delicious, perfect with the pineapple in it. Since it was a birthday cake, I made more of a traditional frosting, mixing cream cheese (8oz), vanilla instant pudding mix (large) and milk (1 1/2 cups) with the remaining pineapple, cocount (1 1/2 cups) and whipped topping (8oz), then refrigerated. Just wonderful!
