Ingredients:

  • 8 oz. dry spaghetti, prepared according to package directions, kept warm
  • 1/4 cup dry bread crumbs
  • 3 tablespoons butter or margarine, divided
  • 3/4 cup (2.25 oz.) BUITONI Refrigerated Freshly Shredded Parmesan Cheese (5 oz.), divided
  • 1/2 cup chopped onion
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground white pepper
  • 1 can (14 1/2 fl. oz.) chicken broth
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
  • 2 cups cooked, chopped turkey breast meat
  • 2 cans (4 oz. each) sliced mushrooms, drained
  • 1 cup frozen peas, thawed
  • 2 tablespoons dry sherry

Directions:

PREHEAT oven to 350° F. Lightly grease 13 x 9-inch baking dish.

COMBINE bread crumbs and 2 tablespoons butter in small bowl. Stir in 1/4 cup cheese.

MELT remaining 1 tablespoon butter in medium saucepan over medium heat. Add onion; cook, stirring occasionally, for 1 to 2 minutes or until tender. Stir in flour, salt and pepper; cook, stirring constantly, for 1 minute. Remove from heat; gradually stir in broth. Return to heat; bring to boil over medium heat, stirring constantly. Stir in evaporated milk and remaining 1/2 cup cheese; cook over low heat until cheese melts. Remove from heat. Stir in turkey, mushrooms, peas and sherry.

COMBINE pasta and turkey mixture in large bowl. Pour into prepared baking dish. Sprinkle with bread crumb topping.

BAKE for 20 to 25 minutes or until topping is lightly browned. Serve immediately.

    Excellent meal - my kids and husband loved it. Tip - cook the spaghetti and do all your prep work (chop turkey, thaw peas, etc.) BEFORE you start with the sauce. Yummy!

    I saw this recipe the other day and wanted to try it. My daughter is a huge pasta fan. So it seemed the perfect recipe to try with all of the left over turkey I would be having. It was very easy to make but it tasted like I spent all day planning it. I will make this again it is now a favorite for us. The flavor was very good and for once everyone liked it .     I fixed this wonderful dish last night using left over turkey from Thanksgiving, it really made quite a large amount but, that is fine as we love left-overs.I did not have chicken broth so used cream of chicken soup instead, also added a small can of diced black olives,and left out the sherry. The directions are a little off key, I think the butter should have been melted before putting it into the bread crumbs, also the remaining 1 Tblp of butter is not enough for the 1/4 cup of flour, I had to add more butter, and it says Pamesan cheese, was it fresh or grated in the can? I put 1/4 cup of canned grated parmesan cheese into the sauce, and fresh grated cheese in with the bread crumb mixture. Next time I make this dish, I will make it in two dishes and freeze one. It really is a tasty casserole

    If you have Thanksgiving leftovers and don't know what to do, look no further, this is the recipe for you. My family loves this dish and Thanksgiving dinner was not even finished before they were asking me when I was going to make Turkey Tetrazzini. This is a great recipe for beginners or those who like to experiment. I like to use egg noodles and I usually use brandy instead of sherry. If you would like to add a little more zing, do not be afraid to add some of your favorite spices.

    I had turkey in my freezer since Thanksgiving that I did not know what to do with. This recipe was excellent, but time consuming. This is not an easy recipe to prepare if you are in a hurry. All I added was one chicken bouillon for flavor. My family loved it. I would definitely make it again.

    Haven't tried it yet, but are you sure that's the picture that goes with this recipe? That's definitely French Fried Onion Rings on the top, and it looks like macaroni and cheese under. But the recipe calls for cooked spaghetti,chopped onion, and breadcrumb topping. ????? Thanks.

    Great Turkey Leftovers

    I tried this recipe to use up some of those never ending turkey leftovers. It was fairly easy to make and the cheese really gives it a nice flavor. I did however add 3 T. pimento to give it a little zip. I froze the leftover individual servings for quick meals at a later date. This is a good stick to your ribs meal!!

    I used this recipe, but a couple of the steps were left out in the instructions, such as sprinkling the reserved breadcrumbs over the mixture & putting it in the oven to brown. I substituted sauteed spinach & onions for the peas. My family enjoyed it with this variation.
