White Chip Island Cookies have a wonderful flavor combination of coconut, vanilla, white morsels and nuts. These are great for entertaining or special everyday treats.

Ingredients:

  • 1 2/3 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (1 1/2 sticks) butter or margarine, softened
  • 3/4 cup packed brown sugar
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Premier White Morsels
  • 1 cup flaked coconut, toasted if desired
  • 3/4 cup chopped macadamia nuts or walnuts

Directions:

PREHEAT oven to 375° F.

COMBINE flour, baking powder, baking soda and salt in small bowl. Beat butter, brown sugar, granulated sugar and vanilla extract in large mixer bowl until creamy. Beat in egg. Gradually beat in flour mixture. Stir in morsels, coconut and nuts. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 8 to 11 minutes or until edges are lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

    Truly Amazing Cookie!!

    I'm a big TOLL HOUSE chocolate chip cookie fan so not too many other cookies impress me. This one is a WOW cookie. If you love coconut this is for you! We made it with roughly chopped pecans instead of macadamia nuts (too expensive) and they were fantastic. We also skipped the salt and just used salted butter. Much better this way. ENJOY!!

    Best Macademia nut cookies!!

    I used butter melted slowly to avoid losing liquid, making mixing easier. I use a very slick heavy cookie tray and do not use spray or foil. To cut down on oven time, I will be buying more cookie trays.

    Awesome cookie! I baked these on Wednesday for our church Cookie Walk, and between my sampling them and my husband's sweet tooth, I took almost one dozen less than I had planned! They definitely are at the top of my cookie recipe list! I did not toast the coconut, and baked them on parchment paper to keep their light color, but you still have to watch the baking time closely.

    Good cookie! I did make some changes in the recipe. I used 1 stick of butter and 1/2 stick of butter flavored Crisco, and I chilled the dough for a couple of hours before baking. This produced a cookie that didn't go completely flat during baking! I will make this one again, but I wish macadamia nuts weren't so expensive!

    I made these in September 2004 for a picnic that my husband was hosting for his men at the Air Force Base. He told me they all raved about them and wanted me to make them again. I also made a batch for my cousin who is a college student and she said that she and her roomates LOVED them. I screwed up on the first batch (I think my butter wasn't soft enough) which is the worst thing to do when you think about the price of macadamia nuts. However, they came out great after that. I'm glad I tried again because they reminded me of my trip to Hawaii and the delectable cookies I sampled in Maui. This is a wonderful tasting cookie. Be sure to toast the coconut as instructed because it really adds a nice flavor to the cookie.

    I have made both the White Chip Island Cookies and the Bars. I toasted the coconut for the bars, but the cookies (untoasted) had more coconut flavor. I was also short on white chocolate chips for the cookies, so I used mostly regular semi-sweet chips. Being a chocoholic, I prefer a fix in any treat. But even with that said, in my limited experience with the white chips, if they touch the pan at all, they tend to carmelize and become rock hard, which isn't ideal for my toddlers. Overall, a very tasty cookie and I highly recommend (admittedly with bias) the chocolate substitution!
