This easy Zucchini Corn Casserole is a great complement to grilled hamburgers or meats and is a good way to use up some of the abundance of fresh zucchini from your garden!
- 2 packages STOUFFER'S Corn Souffle, defrosted according to package directions
- 1 pound zucchini, cut into 1/2-inch chunks
- 1/3 cup chopped onion
- 1 cup stuffing crumbs
PREHEAT oven to 350° F.
COMBINE corn soufflé, zucchini and onion in medium bowl; pour into 1-quart baking dish. Top with stuffing crumbs.
BAKE for 50 to 60 minutes, or until knife inserted near center comes out clean.
